Featured recipe: Scones!

Scones

When I first opened A Taste of Heaven in 1994, someone

suggested that because I was Irish, scones would seem like

a natural thing for me to serve scones. Problem was, I had

never had one that was any good, so I assumed that scones…

well…sucked! Most seemed like dried building material that even

the termites would frown upon no matter how hungry they

were. But I read a quote from a great baker, Rose Levy

Bernhaum that said, “to be a truly good baker, you had to make

something that you didn’t like so delicious that even you would

crave it!”


So, here I was, 2 days before opening and rising to the challenge

of making a scone that I would actually enjoy. It took 21 attempts,

switching from cream to milk to buttermilk, changing the ratio of

sugar to flour, increaasing the butter, then decreasing it again…

then remembering a dear friend’s mother, who always froze her

biscuits prior to baking them to get them crusty on the outside,

while still moist and delicious in the middle.


Finally, I had what I deemed to be a scone that even I would

enjoy! Soon, the Chicago Tribune, The Chicago Sun Times,

The Reader, Channel 7 News and New City declared that

A Taste of Heaven served the best scones in the city!! Now you

may ask why would I give away the recipe for something that

literally and figuratively has been my bread and butter for all

these years. In truth, though I hope you’ll always come to

A Taste of Heaven whenever you want one of our delicious

scones, I know that it may not always be an option, and this

way, you can have them fresh in your own home, from your own

oven, whenever you feel the urge to bake. Enjoy!
